Feel free to check out the syllabus for my course on juries at BU Law School. Admittedly, it is a bit out of date by now, since I loaded this one up in about 2003. Still, you can get a good idea about the focus.

I would suggest putting Neil Vidmar's book on the American Jury in there somewhere. It would fit into multiple categories, so I'm not sure where it would go best - maybe have them read certain chapters as you go along?
